Menus obsess over bean origin, spirit provenance, glassware and ice shape. The one ingredient common to almost everything on a hospitality drinks list is water yet usually the only thing nobody has specified at all. It just comes out of the tap, whatever the local water company happens to be supplying that week.

That’s a strange gap, because water isn’t a neutral carrier. It’s the largest single ingredient in a cup of filter coffee by a wide margin, the entire substance of the ice in every drink you pour, and the base of every dilution in a cocktail. Get it wrong and it undermines everything else on the menu, no matter how good the beans or the spirit are.

Why does water quality actually change how coffee tastes?

Coffee is roughly 99% water. Specialty Coffee Association‘s brewing water standard exists precisely because that fact is so easy to ignore. Its target: zero chlorine, total dissolved solids (TDS) around 150 mg/L within a 250 mg/L range, calcium hardness around 68 mg/L, alkalinity around 40 mg/L, and a neutral pH of 7.0.

Each of those numbers is doing a specific job. Chlorine, which most UK municipal water carries at low but noticeable levels, reacts with compounds in coffee to produce a flat, medicinal off-flavour. The same note you’d get from over-chlorinated pool water, just subtler. Water that’s too soft under-extracts, producing a thin, sour cup; water that’s too hard over-extracts into bitterness, and scales up espresso machines and boilers over time, driving up maintenance costs on top of the flavour problem. Calcium and magnesium in the right range actually help extraction, binding with flavour compounds to build body and sweetness so the goal isn’t “purer is better,” it’s “consistent and correctly balanced.”

Most venues have no idea where their mains water sits against any of this, and it isn’t a fixed number. Hardness and mineral content vary by region and even by season, which means a recipe that tastes right on Monday can taste different by Friday, and a recipe that’s dialled in at one site can taste completely different at another site ten miles away.

Does the same logic apply to cocktails and ice?

Yes, in two distinct ways. First, ice: dissolved minerals and impurities in water are what make cloudy ice cloudy. What the clear ice cocktail bars pay a premium for isn’t a different kind of water, it’s water that’s been treated to remove exactly the dissolved solids that unfiltered mains water still carries. Second, dilution: every stirred or shaken drink is diluted with water as it’s made, and that water’s chlorine content and mineral profile affects the final taste of the drink in the same way it affects coffee extraction. Mixers matter too. Tonic, soda and sparkling water made on-site from filtered mains water taste noticeably different from the same drink made with water carrying a faint chlorine note, particularly in anything served cold and lightly flavoured, where there’s nowhere for an off-note to hide.

Isn’t this over-engineering a glass of water?

It would be, if guests could taste specifics. They can’t tell you their espresso is running at 220ppm TDS instead of 150. What they can tell you is that the coffee tastes flat, or the tonic tastes faintly of the swimming pool, or the ice in their negroni is cloudy and melts fast. They’ll form an opinion about the venue’s overall standard from it, the same way they would from a smudged glass or an inconsistent pour. Venues that invest heavily in bean sourcing, spirit selection and glassware, and then let the one common ingredient across all of it run on unfiltered, inconsistent mains water, are undermining their own investment at the most basic level of the drink.

What does getting the water right actually look like operationally?

For a single-site, independent venue, it means matching mains water to a filtration system that removes chlorine, correcting hardness and TDS to sit in the target range and then holding it there regardless of what the local water company’s supply happens to be doing that month. For a group with multiple sites, it means something more valuable: consistency. A signature drink or house coffee blend should taste the same in Leeds as it does in London, and the only way to guarantee that is to normalise the water itself rather than hoping the underlying mains water happens to be similar.

This also solves a problem most venues don’t realise they have until they go looking for it: mains water isn’t static. Water companies vary treatment levels and source blends through the year, particularly during periods of high demand or drought-related supply stress, when more water gets drawn from different sources than usual. A bar or kitchen running unfiltered mains water is, in effect, letting its water company quietly adjust one of its ingredients throughout the year without anyone at the venue knowing it’s happened.
